Chef Joe (Takeru Sugawara) was originally a regular at a neighboring Golden Gai lounge before deciding to open a place that offered "something beyond just drinking." His open kitchen turns out dishes with flair: the signature "JO-Atsu Menchi Katsu"—a round, molten-cheese-stuffed meat patty—alongside charred water octopus and grapefruit salad, white chicken liver, and finishing pastas, all rooted in French and Italian technique but playfully seasonal. Plates start from around ¥300 and drinks hover around ¥700, making it one of Golden Gai's best value stops. Featured on the TV show "Matsuko's Unknown World," it updates its Instagram regularly (@bistropavo) and fills up fast—even same-day phone reservations can be a gamble.
